Independence Day is one of our favorite summer holidays and a perfect time to spend with good friends and family. The warm weather and festive activities are the perfect setting for a healthy, organic outdoor barbeque. Plan the perfect day with this delicious summer menu:

Nectarine Caprese Skewers
Welcome your guests with a delicious and refreshing appetizer! This twist on the traditional caprese salad incorporates fresh summer stone fruits like nectarines in place of tomatoes. Or, spruce it up and keep wedges of heirloom tomatoes for a bigger bite.


Fresh nectarines (medium ripe)
Small balls of fresh mozzarella
Fresh basil leaves
Olive oil
Balsamic vinegar


  1. Cut the nectarines in half, remove the pit, and then cut into wedges.
  2. Assemble the skewers with a wedge of nectarine, a basil leaf, and a mozzarella ball.
  3. When you have all the skewers complete on a plate, drizzle with olive oil and balsamic vinegar, then sprinkle with salt and pepper.


Organic Grilled Chicken with Smoky Hot BBQ Sauce
Nothing tastes better than BBQ chicken on the grill. Choose fresh organic, free-range chicken to maximize flavor and juiciness. We like using this smoky hot BBQ sauce recipe that incorporates the spicy, umami flavors of chipotle peppers.

Smoky Hot BBQ Sauce


  1. Preheat grill on high for 10 min. Don’t forget to coat the cleaned grill grate lightly with vegetable oil.
  2. Sear the chicken on the grill for 2-3 minutes until they are lightly browned ¼ the way up from the bottom. Turn the chicken over and sear for an additional 2-3 minutes. Reduce the heat to medium and close the lid.
  3. Cook the chicken for 12-15 minutes or until the internal temp reaches 165 degrees; check by inserting a thermometer halfway into the thickest part of chicken. During the final minutes, baste evenly with BBQ sauce. Transfer cooked chicken to a clean platter and serve with remaining BBQ sauce on the side.


Organic Wheat Berry Summer Salad

Wheat berries are actually the whole kernel of a grain of wheat Packed with protein and deliciously versatile, this grain makes the perfect base for any cool, refreshing summer salad. You can toss any vegetables you like in this salad to make it yours, and add cheese or proteins as desired. We like this citrusy recipe for outdoor occasions.


1 cup wheat berries (cooked according to directions and cooled)
2 persian cucumbers
1 cup small red onion
1 ½ cups arugula
1 cup heirloom cherry tomatoes (halved)
2 cloves garlic (chopped)
2 tbsp olive oil
2 tbsp lemon juice
1 tsp paprika
Salt & pepper to taste
Shaved parmesan cheese to taste


Combine and toss!
